Instant Pot Corned Beef Hash. Our favourite brunch in the Milner household and the perfect use of corned beef, onions, carrots and potatoes. It is much quicker to make in the Instant Pot Pressure Cooker and your kids will fight you over the last spoonful.

Corned Beef Hash must be one of my favourite old school cheap recipes ever. We are currently running a theme dedicated to World War 2 British Rations and the first meal we thought of was corned beef hash using tins of corned beef.

My Grandma was Irish and always had lots of great meals that she would cook for me and this included Corned Beef Hash, though I am sure this is just because she had a thing for potatoes and would eat them all the time!

The great thing about Instant Pot Corned Beef Hash, is that you can simply grab a cheap can of corned beef and mush it up with lots of potato, carrot and onions and you have a yummy lunch.

I also love the fact that I don’t have to wait forever for the potatoes to go soft and how quick the Instant Pot makes this dish.

When we lived in the UK we would have it all the time and have often had a few family versions of it. I always remember Dominic making me it layered with layers of corned beef, sliced potatoes, beans and a huge amount of cheese.

I am now getting hungry just thinking about it.

But I have a problem when it comes to corned beef hash:

Cans of corned beef is crazy expensive here in Portugal. You could easily be talking 4 Euros here for one can!

When you compare that it is 75% cheaper in the UK, it is no longer a cheap family meal.

Plus, when you compare that for 4€ here in Portugal I can get 8 small pork chops or 6 chicken breasts, or a just cooked rotisserie chicken, you can see why I don’t buy it very often.

But when we were in the UK back in June, I binged on it. I just couldn’t stop eating it and my aunt’s kitchen smelt of my Instant Pot Corned Beef Hash all the time.

I then took a few cans with me and made lots of it as we travelled around Europe in our tent. It made the best ever camping breakfast!

But my Instant Pot Corned Beef Hash binge is far from over, as I discovered while travelling how cheap they are on Amazon.

There are a huge amount of sellers on there selling it. This brand is our favourite and its so nice having all the tinned corned beef delivered to us, rather than having to carry it all home from the supermarket!

Instant Pot Corned Beef Hash Uses JUST 4 Main Ingredients:

In some versions of Instant Pot Corned Beef Hash, the ingredients list can use mixed peppers instead of carrots and in some American versions I notice they add eggs, but this is the classic Corned Beef Hash that I grew up with and adore!

How Do You Cook Corned Beef In The Instant Pot?

Start by chopping up and peeling your carrots, onion and potatoes.

#2 Throw It All In

Then next you throw the prepped vegetables, along with your beef stock in the Instant Pot and let the Instant Pot Pressure Cooker do its magic.

#3 Add The Corned Beef

Add the corned beef and let it all mix together with the seasonings to form the heavenly comfort food that is corned beef hash!

Instructions

  • Peel and dice the potatoes, the carrots and the onion.

  • Place them into the bottom of your Instant Pot and add 375ml/1.5 cups of beef stock.

  • Place the lid on the Instant Pot, set the valve to sealing and cook for 7 minutes on manual pressure.

  • When it beeps, quickly release pressure and open the Instant Pot. Add seasoning, dice the corned beef and add it to your pot. Mix it well with a wooden spoon on the sauté setting for 2 minutes, or until the corned beef is warm and well mixed.

  • Serve while it’s still warm.

Notes

I chop the potatoes, corned beef into the same medium sized chunks. The carrots are better as tiny cubes, as is the carrots, so that everything is well cooked and you don’t have crunchy carrots syndrome.

For the stock we used this one. It gives so much more flavour compared to a cheap stock cube. Though you can use either.
